Faustino Trujillo Moncayo owns La Guadua farm, where he grows Castillo and Colombia variety coffees. After picking, the coffee is fermented twice: Once in cherry form in a hopper, and then depulped and held in a fermentation tank. The combined fermentation time is 36 hours. The coffee is then washed and dried for 15 days in parabolic driers and/or on patios.
